* Fried Rice *

I LOVE fried rice! It's my favorite part of my restuarant chinese food meals...although I do like the main entree as well. This recipe is really easy and is perfect for using up leftover rice! It also goes great with the Baked Sweet and Sour Chicken I posted a few days back! The recipe is found here.

* Fried Rice *
3 cups cooked white rice
3 tbs sesame oil (I used regular canola oil)
1 cup frozen peas and carrots, thawed (My bag of mixed veggies had corn in it so I threw it in too)
1 small onion, chopped
2 tsp minced garlic
2 eggs, slightly beaten
1/4 cup soy sauce

On medium high heat, heat the oil in a large skillet or wok. Add the peas/carrots mix, onion and garlic. Stir fry until tender. Lower the heat to medium low and push the mixture off to one side, then pour your eggs on the other side of skillet and stir fry until scrambled. Now add the rice and soy sauce and blend all together well. Stir fry until thoroughly heated!

You must have read my mind. I have been thinking about making fried rice for the past couple of weeks. Thanks for posting this recipe! Your baked sweet and sour chicken looks great, too!
